Ham, Asparagus and Feta Tart

An easy, colourful, and delicious summer tart recipe featuring leftover Christmas ham, a sheet of ready-made flaky pastry and in-season vegetables.

Ingredients
 
 

  • 1 sheet flaky puff pastry defrosted if frozen
  • 1 Better Egg beaten
  • ½ cup grated cheese
  • ½ cup cherry tomatoes halved
  • 6 asparagus spears sliced in 1cm pieces
  • 2 slices leftover Farmland Xmas ham torn into bite size pieces
  • 50 g feta cheese crumbled
  • handful rockets

Instructions
 

  • Preheat your oven to 200°C fan bake and place the puff pastry sheet onto a lined baking tray.
  • Use a sharp knife to score a 1cm border around the edge of the pastry. Brush the border with egg and bake for 10 minutes.
  • Flatten the inside of the pastry leaving the border intact. Sprinkle with grated cheese and top with cherry tomatoes, asparagus, ham and feta cheese. Season with salt and pepper and bake for a further 10 minutes.
  • Leave to cool before slicing into quarters and topping with rocket.
