Halloween party guacamole dip

Boo! This guacamole looks especially green and creepy with red brain bits for a happy Halloween party snack! Tell the kids the crisps are witches hats 🙂

Ingredients
 
 

  • 2 ripe NZ avocados halved, seeded, peeled and diced
  • 4 medium tomatoes peeled and chopped
  • 2 garlic cloves
  • ¼ medium onion chopped
  • 1 small red sweet capsicum
  • 3 tbsp coriander or parsley chopped
  • 1 ½ tsp coarse salt
  • Sprinkle of cayenne pepper or chilli powder
  • juice of 1/2 fresh lime

Instructions
 

  • Process tomatoes, onion, garlic, and chilli (or capsicum) in blender a food processor for about eight seconds.
  • Add avocado chunks, coriander, salt, chilli powder and lime juice to the food processor bowl. Process additional ten seconds.
  • Texture should be chunky like salsa.
  • Taste, and adjust heat by adding more cayenne pepper/chillli powder
  • Refrigerate until served in a fun Halloween style platter.
  • Lime or lemon juice will keep your gorgeous guacamole from turning brown.
  • Note: you can use a mortar and pestle instead of a food processor for a chunkier textured dip.
