Julia and Libby’s Brown Rice & Quinoa Salad

Ingredients
- 2 cups SunRice Naturally Rice & Quinoa
- 2 cups baby spinach roughly chopped
- 2 cups purple cabbage roughly chopped
- 1 cup peas
- 1 Red Capsicum cubed
- 4 Spring onions sliced
- ¾ cup almonds
Sweet Chilli Dressing:
- 2 Tbsp olive oil
- 2 Tbsp maple syrup or honey
- 3 Tbsp vinegar
- ½ tsp salt
- ½ tsp red chili flakes
Instructions
- Place SunRice Naturally Rice & Quinoa and 2 cups of water into a medium sized saucepan, bring to a boil. Reduce heat and simmer, covered for 25 minutes. Remove from heat and stand, covered for 5 minutes. While the rice is cooking, prepare the dressing in a small bowl by mixing together the ingredients.
- In a large bowl, add the brown rice and quinoa, salad ingredients, pour dressing over and gently toss to combine
