Ingredients
 
 

  • 2 cups SunRice Naturally Rice & Quinoa
  • 2 cups baby spinach roughly chopped
  • 2 cups purple cabbage roughly chopped
  • 1 cup peas
  • 1 Red Capsicum cubed
  • 4 Spring onions sliced
  • ¾ cup almonds

Sweet Chilli Dressing:

  • 2 Tbsp olive oil
  • 2 Tbsp maple syrup or honey
  • 3 Tbsp vinegar
  • ½ tsp salt
  • ½ tsp red chili flakes

Instructions
 

  • Place SunRice Naturally Rice & Quinoa and 2 cups of water into a medium sized saucepan, bring to a boil. Reduce heat and simmer, covered for 25 minutes. Remove from heat and stand, covered for 5 minutes. While the rice is cooking, prepare the dressing in a small bowl by mixing together the ingredients.
  • In a large bowl, add the brown rice and quinoa, salad ingredients, pour dressing over and gently toss to combine
