Let’s Eat Smashed Pita Burgers

Ingredients
 
 

Tzatziki

  • 1 cup plain greek yogurt
  • ½ cucumber grated and drained
  • 1 clove garlic minced
  • 1 tbsp fresh dill chopped
  • 1 tbsp fresh mint chopped
  • Olive oil for drizzling
  • Juice 1/2 1 lemon
  • Salt
  • Pepper

Instructions
 

  • Prepare the Tzatziki: Grate the cucumber and squeeze out any excess liquid. In a bowl, combine the yogurt, cucumber, garlic, dill, mint, lemon juice and a drizzle of olive oil. Season with salt and pepper Mix well and set aside.
  • Cook the Burgers: Grill the burger patties on the BBQ until cooked through.
  • Smashed Pita: Once the burgers are almost done, place a pita bread on top of each patty and press down to flatten it. Cook for 1-2 minutes, then flip the pita over and cook for another 1-2 minutes on the other side.
  • Assemble: Top each pita and burger with tzatziki, cherry tomatoes, cucumbers, red onion, fresh herbs, and crumbled feta.
