Let’s Eat Smashed Pita Burgers
Enjoy summertime with favorite pita burgers topped with fresh tzatziki, featuring plant-based 'Let's Eat' burger patties grilled to perfection on the barbecue.
Ingredients
- 1 box Let's Eat burger patties
- 5 pita breads
- Cherry tomatoes halved
- Red onion sliced
- Feta cheese crumbled
Tzatziki
- 1 cup plain greek yogurt
- ½ cucumber grated and drained
- 1 clove garlic minced
- 1 tbsp fresh dill chopped
- 1 tbsp fresh mint chopped
- Olive oil for drizzling
- Juice 1/2 1 lemon
- Salt
- Pepper
Instructions
- Prepare the Tzatziki: Grate the cucumber and squeeze out any excess liquid. In a bowl, combine the yogurt, cucumber, garlic, dill, mint, lemon juice and a drizzle of olive oil. Season with salt and pepper Mix well and set aside.
- Cook the Burgers: Grill the burger patties on the BBQ until cooked through.
- Smashed Pita: Once the burgers are almost done, place a pita bread on top of each patty and press down to flatten it. Cook for 1-2 minutes, then flip the pita over and cook for another 1-2 minutes on the other side.
- Assemble: Top each pita and burger with tzatziki, cherry tomatoes, cucumbers, red onion, fresh herbs, and crumbled feta.
