Marinated Baked Capsicums
This colourful capsicum dish makes a wonderful addition to your dinner table. Prepare in advance and keep in the fridge.
Ingredients:
1 red and 1 yellow capsicum
3 tablespoons Olivado Extra Virgin Avocado Oil
2 teaspoons wholegrain mustard
1 teaspoon honey
1 teaspoon soy sauce
Method”
- Pre-heat oven to 180 degrees Celcius.
- De-seed and slice capsicums into bite-sized pieces.
- Line a small roasting tray with baking paper. Place capsicum pieces in single layer.
- Drizzle oil and shake the tray to coat capsicum pieces well.
- Bake in the oven for 15-20 minutes until the capsicums are soft and browned. Tip all cooked capsicums and cooking juices/oils in a bowl and let cool.
- Meanwhile mix mustard, honey and soy sauce in a small bowl, then add to the cooled capsicum. Combine well.
- Chill before serving.
Tip: Mix 2 tablespoons Tahini, 1 tablespoon wine vinegar and 1 teaspoon Miso for a variation. (in place of mustard, honey and soy sauce)
