Marinated Baked Capsicums

This colourful capsicum dish makes a wonderful addition to your dinner table. Prepare in advance and keep in the fridge.

Ingredients:

1 red and 1 yellow capsicum

3 tablespoons Olivado Extra Virgin Avocado Oil

2 teaspoons wholegrain mustard

1 teaspoon honey

1 teaspoon soy sauce

 

Method”

  1. Pre-heat oven to 180 degrees Celcius.
  2. De-seed and slice capsicums into bite-sized pieces.
  3. Line a small roasting tray with baking paper. Place capsicum pieces in single layer.
  4. Drizzle oil and shake the tray to coat capsicum pieces well.
  5. Bake in the oven for 15-20 minutes until the capsicums are soft and browned. Tip all cooked capsicums and cooking juices/oils in a bowl and let cool.
  6. Meanwhile mix mustard, honey and soy sauce in a small bowl, then add to the cooled capsicum. Combine well.
  7. Chill before serving.

Tip:  Mix 2 tablespoons Tahini, 1 tablespoon wine vinegar and 1 teaspoon Miso for a variation. (in place of mustard, honey and soy sauce)
