No-waste potato peel chips

A heap of potato peel chips.
What do you do with your potato peelings? Chances are, if you don't compost them, you simply throw them away. Don't - because they are a superb snack! We guarantee, once you've tried these, you'll never turn back. They are a great way of keeping hunger at bay while you're making the dinner - two plates of food in one!

Ingredients
 
 

  • potato peels from 1kg potatoes
  • 1 tbsp oil
  • ½ tsp flaky sea salt
  • ½ tsp paprika
  • ¼ tsp sumac
  • Pepper

Instructions
 

  • Wash potatoes. Peel as normal, but instead of throwing the skins away, dry them on paper towels, discarding any that have eyes or discolouration. Use potatoes for whatever you're making.
  • In a bowl, mix the potatoes with the oil, salt, paprika and sumac. Transfer to a roasting plate or dish, and cook in 190°C oven, turning occasionally, for 20 minutes or until your chips become crispy. Drain onto paper towels to get rid of excess oil and serve immediately. Yum.

Notes

Feel free to experiment with whatever flavours you like. We used paprika and sumac here, but these no-waste potato peel chips work with just about any combination - rosemary and garlic, parmesan cheese and thyme, chilli - whatever takes your fancy.
