Pineapple Mojito
Beyond the traditional mojito - fresh mint muddled with lime juice, sugar, white rum and a splash of sparkling water - some fresh ideas if you want to get a little flasher, add strawberries, blackberries, watermelon, pineapple or more.To get in the Mojito Day mood, here's a recipe for a pineapple mojito that takes five minutes to prepare for 5 o'clock drinks. Ingredients
- 6 ice cubes
- 2 Tbsp diced fresh pineapple
- 120 ml white rum e.g. Bacardi
- 60 ml lime juice
- 60 ml pineapple juice
- 2 tsp sugar or to taste
- Mint leaves and lime wedges to garnish
Instructions
- Place the ice and pineapple in a cocktail shaker and pour the rum, lime juice and pineapple juice over. Add the sugar.
- Shake to combine; chill.
- Pour the mixture into a tall, narrow glass and serve immediately.
- Garnish with lime wedges and fresh mint.
