Pork Cutlets with Apple

This traditional pork and apple recipe is under $10 to make, it’s fast, easy and super delish. I love trim pork but remember, pork is the meat that takes the longest for us to digest so eat once or twice a week. Otherwise it’s unholy!

Serves 4

Pork Cutlets with Apple recipe, you need:

4 trimmed pork-loin cutlets
Juice and zest of one lemon
1 Tbsp olive oil
3 Tbsp wholegrain mustard
4 small Granny Smith apples

How to:

Mix lemon juice, lemon zest, olive oil and mustard together in a small bowl.
Spoon some on one side of cultlets and place them coated side-down in an ovenproof dish or baking tray.
Spoon remaining marinade on top of cutlets. Set aside in fridge to marinate for one hour. Preheat oven to 220C.
Core and quarter apples and poke them in among cutlets. Bake 45 minutes. The juices from cutlets can be poured into small saucepan, reduced and poured over cutlets for serving.
Serve with cubed potatoes and fried onions if desired. And the whole baked apple so you don;t need apple sauce.
