Cinnamon Honey Pork with Apple

You can’t beat the kiwi combo of pork and apple. Add cinnamon and manuka honey and you’re onto a winner winner weeknight dinner.

Ingredients:

2 Jazz apples, thinly sliced or spiralized
Half a lemon, juiced (about 2 tablespoons)
1 tablespoon manuka honey
1 teaspoon cinnamon
6 thin cut NZ Pork chops, bone in
Seasoning:
1/2 teaspoon salt
1/4 black pepper
1/2 teaspoon smoked paprika
1/2 teaspoon chilli powder
3/4 teaspoon garlic powder
1 teaspoon sugar
2 teaspoons brown sugar
Fresh sage to garnish
Mashed potato to serve (we love Wilcox)

Method:

Preheat your oven to 190 degrees and line a baking pan with tin foil.
In a medium-sized bowl, toss together the apples, lemon juice, manuka honey and cinnamon. Place this apple mix into the bottom of the lined pan.
Mix together the seasoning ingredients and rub into the pork chops and place on top of the apples.
Bake for 30 minutes until the apples are soft and  the pork chops reach an internal temp of 65 degrees.
Serve the pork chops on mashed spuds with the apples and saucy gravy on top with fresh sage as garnish.
