Spud and sausage casserole
Hmm, nothing beats coming home to the comforting aroma of a good slow cooker casserole. Throw bacon in the mix and you're home and hosed. Give this Potato Bacon and Sausage Casserole a try this week.
Ingredients
- 1 tbsp Olivado Extra Virgin Olive Oil
- 8 pork sausages
- 1 large onion
- 4 rashers bacon cut into pieces
- 2 cloves garlic crushed
- 4 large potatoes peeled and thinly sliced
- ¼ tsp Superb Herb fresh sage
- 1 ¼ cups vegetable stock
- salt and pepper
Instructions
- Preheat your oven to 180 °C.
- In a frypan, gently cook the pork sausages for 5 minutes until golden, remove from pan and set aside.
- In the same pan, add onion and cook through. Set aside.
- Add bacon to pan and fry. Add garlic, cook for 30 seconds and then set aside with the onions.
- Turn off the heat.
- Arrange half the sliced potato in bottom of a cast iron pan or casserole dish.
- Add the bacon, onion and garlic mix.
- Sprinkle fresh sage over the mix.
- Layer remaining potato slices and then add sausages on top.
- Pour stock over and cover with the lid.
- Cook for an hour in the oven.
Notes
Slow Cooker option:
Layer as above but in your slow cooker.
Cook on high for 3-4 hours or until potato is tender.
