Potatosaurus

Children and adults will have fun making and eating this Potatosaurus.

Makes: 4 dinosaurs

Ingredients

4 medium general purpose or baking (floury) potatoes
½ cup of grated tasty cheese
½ cup milk
¼ cup grated cheese
½ green capsicum, deseeded and cut into small triangles
½ red capsicum deseeded and cut into small triangles
½ yellow capsicum, deseeded and cut into small triangles
4 stuffed green olives

Additional fillings: chopped ham, sun-dried tomatoes, crushed pineapple, gherkins or olives

Method

  1. Cook potatoes until soft. Either bake in preheated over for 50–55 minutes at 200°C, or microwave for 3-4 minutes per potato on high power.
  2. Cut one-third off the top of potatoes using a sharp knife.
  3. Scoop out most of the potato flesh leaving a shell about ½ cm thick all around.
  4. Mash potato flesh, first measure of cheese and milk together until smooth. Pile back into the potato skin.
  5. Pre-heat grill.
  6. Cut the removed potato tops in half lengthwise to make two long wedges – one for the dinosaur’s neck and head and one for the tail.\
  7. Place filled potato shells together with the wedges on a baking tray and sprinkle with second measure of cheese and cook under preheated grill for a few minutes until golden.
  8. Arrange potatoes on serving plates.
  9. Push one wedge into each potato to be the dinosaur’s neck and attach a second wedge for the tail as illustrated.
  10. Use the capsicums and olives as desired to make the potatoes look like dinosaurs.
