Prawns in Chilli Sauce

This is one of my family’s favourite Chinese style dishes. Tasty prawns are sautéed and sweet chilli sauce is added. You can serve this dish as a starter or as part of Chinese style banquet dinner.

Ingredients (serve 2-3)

250g raw prawns, shelled but leave the tails on
2 spring onions chopped
1 stalk celery chopped
1 clove garlic chopped
3cm cube fresh ginger chopped
1 tablespoon Cooking oil
Cabbage or lettuce leaves to serve
For the chilli sauce
½ cup water
3 tablespoons tomato sauce
2 tablespoons brown sugar
1 tablespoon sesame oil
1 ½ teaspoons corn flour
1 teaspoon toban djan. (Chinese chili bean sauce) or 1 teaspoon crushed red hot chilli

 

How to make Prawns in Chilli Sauce:

  1. Mix all chilli sauce ingredients except toban djan in a small bowl.
  2. In a wok or frying pan, heat 1 tablespoon of cooking oil on high heat (any oil, but not flavoured oil). Sauté chopped ginger, celery, spring onions, garlic and toban djan until fragrant.
  3. Add prawns. Sauté until the prawns change colour and almost cooked. This only take a few minutes. Do not overcook.
  4. Add chilli sauce and continue to sauté until the sauce thickens and coats the prawns evenly.
  5. Serve on fresh cabbage or lettuce leaves.
