Seafood marinara spaghetti
Craving a delicious seafood treat? Succulent prawns, mussels, and scallops bathe in a rich, garlicky marinara sauce, perfectly paired with spaghetti. Ideal for an elegant dinner or a quick yet satisfying weeknight meal. Enjoy!
Ingredients
For the marinara sauce:
- 1 tbsp olive oil or butter
- ½ small onion finely chopped
- 2-3 cloves garlic minced
- ½ tsp chilli flakes adjust to taste
- ½ can crushed tomatoes 200g
- ¼ cup dry white wine Sauvignon Blanc or Pinot Gris would work well
- ½ tsp dried oregano
- ½ tsp dried basil
- Salt and pepper to taste
Spaghetti:
- 170 g Diamond Spaghetti
- 100 g Sea Cuisine Prawns Raw Cutlets defrosted
- 100 g Sea Cuisine Scallops defrosted
- 100 g United Fish Co Mussels defrosted
- Parmesan
- Parsley
Instructions
- Heat butter over medium heat. Fry the scallops for 2 minutes then flip and cook for another 30 seconds. Set aside.
- In the same pan, sauté until the onion is translucent. Add the minced garlic and chilli flakes and cook for 30 seconds.
- Add the remainder of the marinara ingredients, stir and simmer for 15-20 minutes.
- While the sauce is simmering, cook the pasta as per packet instructions, drain and reserve once cooked.
- 5 minutes before serving, add the prawns to the sauce, then place the mussels over the sauce and cook for 5 minutes.
- Once the seafood is cooked, add the drained pasta and reserved scallops to the sauce and toss until well coated.
- Serve and garnish with finely grated parmesan and parsley.
