Smore Brownies

Yum! Chocolate, marshmallow and cookies all in one. What could be better? This recipe is amazing. A must try right now, especially if you want to celebrate all things America and their new president – who loves his junk food.

Smore’s Crust

6 Tbsp butter, melted
1 1/2 C crushed wine biscuits
2 Tbps sugar
Pinch fine salt

Brownie

8 Tbsp butter
A packet of chocolate chips
1 C brown sugar
3/4 C white sugar
1 1/2 Tsp vanilla extract
1/2 Tsp salt
4 large cold eggs
1 C all-purpose flour

Smore’s Topping:

4 cups large marshmallows

Pre-heat the oven to 160 C.
Line an 8 by-8-inch square baking pan with backing paper so it hangs over the edges.

For the crust:
Melt the butter.
Then stir the butter together with the crumbs, sugar, and salt in a medium bowl.
Press the crumb mixture evenly over the bottom of the pan.
Bake for 20 minutes, until golden brown.

Meanwhile, start on the brownie.
Put the butter and chocolate chips in a microwave safe bowl.
Melt in the microwave froa round two minutes then take it out, stir and put back in for another two minutes.
Stir the light brown and white sugars, vanilla and salt into the melted chocolate.
Add the eggs and beat well to make a thick and glossy batter.
Add the flour and stir well combined.

Take out the crust once cooked in the oven and pour the brownie batter over the crust.
Bake until the top is crispy and a toothpick inserted into the middle comes out mostly clean.
Bake for about 40 to 45 minutes.

Remove from the oven and carefully position a rack about 6 inches from the broiler and preheat on low.
Layer marshmallows across the top
Toast under the broiler until golden, (keep an eye on it, it can go quick), about 2 minutes.
Cool on a rack, gently removing the brownies from the pan.
Cut into 12 (2-inch) squares.
