Soba noodle salad jars
This cold soba noodle salad jar makes a quick and easy office lunch, which can be prepared the night before.
Ingredients
- 2 bunches mama san soba noodles 160g (half packet)
- ½ yellow capsicums sliced
- ½ cup mama san shelled edamame
- ½ cup shredded red cabbage
- ¼ cup cherry tomatoes halved
- 1 spring onion sliced thinly
- 2 Better eggs hardboiled and roughly chopped
- 2 tbsp Kewpie mayonnaise
- salt and pepper
- Fresh herbs
Spicy peanut butter dressing
- 3 tbsp peanut butter smooth or crunchy
- 11/2 tbsp mama san sushi vinegar
- 1 tbsp mama san soy sauce
- ½ tsp sriracha sauce
- ¼ cup olive oil
Instructions
- Prepare soba noodles according to the packet instructions. Rinse well in cold water and set aside.
- Boil eggs in boiling water for 8 minutes, place in cold water and peel. Roughly chop and mix with mayonnaise. Season with salt and black pepper.
- Mix all ingredients for the dressing.
- Divide dressing between two jars. Top with soba noodles, vegetables, and egg salad. Place lids and keep in the fridge overnight or pack them to go.
