Soba noodle salad jars

Layered soba noodle salad in two jars.
This cold soba noodle salad jar makes a quick and easy office lunch, which can be prepared the night before.

Ingredients
 
 

  • 2 bunches mama san soba noodles 160g (half packet)
  • ½ yellow capsicums sliced
  • ½ cup mama san shelled edamame
  • ½ cup shredded red cabbage
  • ¼ cup cherry tomatoes halved
  • 1 spring onion sliced thinly
  • 2 Better eggs hardboiled and roughly chopped
  • 2 tbsp Kewpie mayonnaise
  • salt and pepper
  • Fresh herbs

Spicy peanut butter dressing

Instructions
 

  • Prepare soba noodles according to the packet instructions. Rinse well in cold water and set aside.
  • Boil eggs in boiling water for 8 minutes, place in cold water and peel. Roughly chop and mix with mayonnaise. Season with salt and black pepper.
  • Mix all ingredients for the dressing.
  • Divide dressing between two jars. Top with soba noodles, vegetables, and egg salad. Place lids and keep in the fridge overnight or pack them to go.
