Summer Citrus Cocktail

Summer Slush is a refreshing and relaxing cocktail recipe to welcome in the warmer months. This drink is the next best thing to summer itself. Refreshing and relaxing, perfect for a hot, balmy evening or cocktail party.

Serves 10 Prep Time 30 Minutes

Ingredients

1 cup sugar

7 cups water

4 tea bags (we love Dilmah English Breakfast Tea)

2 cups boiling water

500ml Barker’s Orange & Bitters concentrate

500ml Barker’s Lemon syrup

1 1/2 cups gin (we love Rogue Society)

2L soda water

Method:

Pour the 7 cups of water into a large saucepan and bring to boil.

Add sugar and stir until dissolved; set aside to cool.

Place the 4 teabags in the 2 cups of boiling water and let steep 3-4 minutes, then remove the tea bags.

In a large bowl mix together sugar water mix, tea, Barkers mixes and then stir in the gin.

To serve, place ladels of the cocktail mix into a tall glass and fill with soda water.

Garnish with fresh fruit.

 

Tip: For a slushy version, place in freezer container and freeze for at least 2 hours (or ideally overnight), then scoop frozen mix into a glass and top with soda water to serve.
