Ingredients
 
 

  • 6 Angel Bay Gourmet Beef Patties
  • 6 tortillas large
  • 1 ½ cups frozen corn thawed and drained
  • 1 cup canned black beans rinsed and drained
  • 1 red capsicum finely diced
  • ¼ cup red onion finely diced
  • 1 cup grated cheese
  • 125 g sour cream
  • 1 avocado sliced
  • Hot or spicy sauce
  • salt and cracked black pepper to taste

Instructions
 

  • Preheat a cast iron or non-stick pan over medium heat. Don’t add any oil – just tip in the thawed and drained frozen corn. Cook, stirring frequently, until there are some charred spots on the kernels. When the corn is charred enough, add the black beans, capsicum, and red onion and remove from the heat.
  • Cook the frozen Angel Bay Gourmet Meat Patties with a touch of oil on a medium heat for 14-16 minutes, turning every 3-5 minutes.
  • Place a cooked burger in the centre of each tortilla. Top each patty with about 1/3 cup of the corn mixture, then a good sprinkling of grated cheese and a spoonful of sour cream. Slice the avocado and divide between the tortillas. Drizzle with your favourite hot sauce and season to taste.
  • Fold two sides of the tortilla up and over the burger, then fold the other two sides up to enclose the burger.
  • Cook wrapped burgers in the pan over medium-high heat for 5 minutes, turning halfway through.
