Tropical Strawberry Pie

Strawberries, the first fruit to ripen in spring, are enjoyed all over the world, with native forms growing on every continent except Africa. Strawberries are the only fruit to grow its seeds on the outside.

Serves 6

250g cream cheese, softened

1/2 cup sugar

2 punnets strawberries, halved

225g can of crushed pineapple, undrained

1 cup desiccated coconut

300ml thickened cream (or whipped cream)

1 27cm pastry shell, baked

How to make Strawberry Pie:

With an electric mixer, cream together softened cream cheese and sugar for 3 or 4 minutes on high speed.  Stir the strawberries, crushed pineapple and coconut into the cream cheese mixture and mix well. Carefully fold in half of the cream until well-blended.  Reserve remaining cream for pie topping.  Spread the filling in baked pastry crust and chill for several hours.

When you’re ready to serve, pipe, spoon or spread the whipped cream on top of the pie and garnish with more halved strawberries and kiwifruit.
