White wine, garlic and herbs scallops

Forget fancy, these juicy scallops are all about garlicky goodness in a light white wine sauce. Seared to perfection, they're ready in a flash and perfect for a special dinner or a casual treat. Dive in, it's delicious!

  • Defrost the scallops and pat dry on both sides with a paper towel. Brush each scallop with a little oil on both sides and season with salt and pepper.
  • Heat your frying pan or skillet on a medium to high heat. Sear scallops for 2-3 minutes on one side or until golden brown.
  • Gently flip them and add butter and garlic, basting each scallop frequently for a further 2 to 3 minutes.
  • Add the wine and lemon zest and cook for a further 20 seconds. Remove from the heat and sprinkle with chopped parsley.
  • Serve immediately with micro herbs as a garnish.
  • Tip: Reserve the roe and use it to enrich a sauce.
