Easy Greek Couscous Salad

Ingredients
 
 

  • 1 box Diamond Moroccan Couscous
  • 3 large tomatoes chopped
  • 2 Lebanese cucumbers chopped
  • 1 red capsicum chopped
  • 1 small red onion finely chopped
  • 50 g feta cheese crumbled
  • ¼ cup black olives

Greek Salad Dressing

  • 5 tbsp extra virgin olive oil
  • 3 tbsp DYC white wine vinegar
  • 1 small cove of garlic crushed
  • ½ tsp dried oregano
  • ½ tsp salt
  • Freshly ground black pepper to taste

Instructions
 

  • For the salad: Cook the couscous as per packet instructions.and allow to cool.
  • For the dressing: Combine all the ingredients in a jar and shake well until emulsified.
  • To assemble the salad: Tip the cooled couscous into a large bowl and fluff with a fork to break up any lumps. Add the remaining salad ingredients, pour the dressing over, and mix gently until just combined.
  • Serve immediately or refrigerate.
