Easy Greek Couscous Salad
Colourful and flavourful couscous salad recipe using flavoured couscous.
Ingredients
- 1 box Diamond Moroccan Couscous
- 3 large tomatoes chopped
- 2 Lebanese cucumbers chopped
- 1 red capsicum chopped
- 1 small red onion finely chopped
- 50 g feta cheese crumbled
- ¼ cup black olives
Greek Salad Dressing
- 5 tbsp extra virgin olive oil
- 3 tbsp DYC white wine vinegar
- 1 small cove of garlic crushed
- ½ tsp dried oregano
- ½ tsp salt
- Freshly ground black pepper to taste
Instructions
- For the salad: Cook the couscous as per packet instructions.and allow to cool.
- For the dressing: Combine all the ingredients in a jar and shake well until emulsified.
- To assemble the salad: Tip the cooled couscous into a large bowl and fluff with a fork to break up any lumps. Add the remaining salad ingredients, pour the dressing over, and mix gently until just combined.
- Serve immediately or refrigerate.
