Ashia’s Butter Chicken
This is a beautiful recipe for a traditional but family-friendly butter chicken. Quick and easy to make and we all know homemade butter chicken is best.
Ingredients
Chicken Marinade Ingredients:
- 800 g Waitoa Free Range Chicken Diced
- 1 cup Plain yoghurt
- 1 tsp salt
- 1 Tbsp garam masala
- 1 Tbsp Chilli powder
- 2 Tbsp Olivado Avocado oil
- 3-4 cloves garlic crushed
- 1 small piece grated ginger
- ½ Lemon Lemon juice
- Superb Herb Fresh Coriander
- Sunrice 90 second Basmati Rice to serve
Butter Chicken Sauce:
- 75 g butter
- 2-3 Cardamom pods
- 1 piece of cinnamon stick
- 3 cloves garlic crushed
- 1 small piece grated ginger
- 1 tsp salt
- 1 tsp garam masala
- 2 Tbsp Manuka honey
- 1-2 green chillis chopped optional
- 3 large Tomatoes pureed
- 1 Tbsp tomato paste
- 1 cup cream
Instructions
Chicken Method:
- Mix together and rub over chicken pieces, marinate an hour or overnight if you can.
- When ready to cook , spread out on an oven tray and bake for 30-40 minutes at 200 degrees, or until cooked.
Butter Chicken Sauce Method:
- Melt butter and add the whole spices and ginger and garlic and green chillis, add the blitzed tomatoes and puree, cover and cook on low for 10 -15 min.
- Then add salt, garam masala and the honey. Add the cooked chicken, a little boiling water, cover and cook for 10 minutes.
- Lastly add cream and chopped coriander, serve with rice.
