Hot cross easter muffins fresh ideas
Easter treats come in all shapes and flavours. These hot cross Easter muffins are yumny & especially good for a healthy kids Easter treasure hunt.

Ingredients
 
 

  • cup butter
  • 1 cup milk
  • 1 cup sultanas
  • 3 cups flour
  • ½ cup bran flakes
  • ½ cup brown sugar
  • 1 tbsp baking powder
  • 2 tsp mixed spice
  • ½ cup mixed peel optional
  • 1 tsp baking soda
  • 1 lightly beaten egg

Instructions
 

  • Preheat oven to 200 °C.
  • Grease 12 deep muffin tins.
  • In a small pot, heat the butter, milk and sultanas, stirring until the butter is melted. Set aside too cool.
  • In a large bowl, combine all the dry ingredients except baking soda.
  • Stir the baking soda into the cooled milk/butter mixture.
  • Add the milk mixture and egg to the dry ingredients and mix until just combined.
  • Spoon into the muffin tins.
  • Bake for about 20 –25 min until golden brown.
  • Leave in the tins for 5 min before cooling on a rack.
  • When cool, don't be afraid to go overboard with themed icing and decorations. Think - crosses, little lolly eggs, baby bunnies and anything cute-as-pie.
