Ingredients

  • 2 fresh Gurnard fish filets
  • 3 tbsp butter
  • 1 tbsp lemon juice
  • ¼ cup FreshLife almond flour
  • 1 tsp dried dill
  • 1 tsp dried chives
  • 1 tsp onion powder
  • ½ tsp garlic powder
  • Salt and pepper to taste

Instructions

  • On a large plate mix together the almond flour, dill, chives, onion powder, garlic powder, salt, and pepper.
  • Individually place the fish filets into Almond flour mixture ensuring to coast both sides. Gently pack on the almond flour and herb mixture If necessary. Once coated, set aside.
  • In a large frying pan, melt half the butter and half the lemon juice over a medium heat. The pan should not be smoking. If the pan is too hot the butter will burn.
  • Cook the fish for 2–3 minutes. Cooking times may vary depending on the thickness of the fish.
  • Add in the remaining butter and lemon juice. Using a fish slice, gently flip the fish. Cook for a further 2–3 minutes until golden brown.
  • Remove the fish from the pan. Divide the fish between two plates. Pour over some of the butter and lemon juice sauce, serve with chips and green salad.
