Keto cucumber and salmon roll
With the warm weather rolling in, this keto cucumber sushi roll is refreshing, tasty and super easy to make!
Equipment
- 1 sushi mat
Ingredients
- 1 Lebanese cucumber
- 1 pot Aoraki Smoky Salmon Spread
- ¼ cup capers
- Aoraki Malossol Caviar
Instructions
- Trim the ends of the cucumber and peel in long ribbons.
- Place each cucumber ribbon vertically on the sushi mat, overlapping each layer slightly.
- Spread with Aoraki Smoky Salmon Spread, leaving about 1cm of cucumber exposed all around.
- Add the capers in a horizontal line in the middle of the spread.
- Start rolling your sushi ensuring it stays as intact as possible.
- Slice, top with a little Malossol caviar and serve.
