Salmon and Potato Croquettes healthy food ideas
This easy, quick salmon potato recipe is a winner. The addition of salmon is excellent for health and the brainpower of Omega 3s.

  • 440 g tinned pink salmon
  • 1 Onion grated
  • 3 Gro Pak large potatoes
  • 1 egg beaten
  • 2 tbsp Alfa One rice bran oil dressing mayonnaise
  • 1 tsp mustard
  • 210 g Crackers preferably cheese flavour, crushed to tiny crumbs
  • rice bran oil for cooking
  • ¼ cup spring onions chopped


  • Drain and flake salmon; cook and mash potatoes. Combine all ingredients except crumbs.
  • Season to taste, and form mixture into croquettes; roll in biscuit crumbs to form coating.
  • Cook in frypan over medium heat until golden brown; drain carefully and serve with salad and sprinkles of fresh herbs.
