The Lazy Girl’s 15-Minute Cottage Cheese Scramble

What do you do when you’re super tired/lazy and need to will yourself to chop just an onion? I turn to my most tried and tested recipe. Completely carb-free with a good protein and calcium intake, my favourite part are the herbs. Fenugreek leaves are great for skin and digestion, and basil is a super source of iron- bonus, it tastes amazing!

Prep Time: 8 minutes Cooking Time: 5 minutes

Ingredients

150 grams cottage cheese (mashed)
1 medium sized onion (chopped)
1 medium sized tomato (chopped)
1 cup fenugreek leaves
7-8 Italian basil leaves
1 tsp turmeric powder
3 fresh red chilies (chopped)
Salt to taste
1 tsp sunflower oil

Method

  1. Heat the oil in a wok, add onions and sautee until translucent.
  2. Add tomatoes, salt and turmeric powder. Cover and cook on low heat for 2 minutes until tomatoes are mushy.
  3. Add red chillies and fenugreek leaves. Stir.
  4. Add cottage cheese and coat it with the spices.
  5. Let it cook for another 2 minutes on low heat.
  6. Garnish with fresh Italian basil.
