Prawn tacos with mango and coriander salsa
It's fiesta time and there is no better way to celebrate than with delicious seafood tacos!
Ingredients
- 1 packet United Fish Co salt & pepper battered prawns
- 4 handmade tortillas or store-bought
- 1 cup shredded cabbage lightly salted
- 1 mango diced
- ½ red onion finely chopped
- 1 jalapeño seeded and minced
- ¼ cup Superb Herb coriander finely chopped
- 2 limes juiced
- salt to taste
- pepper to taste
Instructions
- Cook the prawns according to package instructions.
- In a bowl, mix together diced mango, red onion, jalapeño, cilantro, lime juice, salt and pepper to make the mango salsa.
- Warm the corn tortillas in a dry pan or microwave.
- To assemble, place some shredded cabbage and prawns on each tortilla shell. Top with a spoonful of mango salsa.
- Serve freshly made.
