Winter radish and walnut salad
Lightly pan fried radishes and honey roasted walnuts make sure a yummy winter salad you can serve warm. Pair with your favorite steak to complete this meal. Or add pulled chicken for an easy lunch option.
Ingredients
- 10 radish chopped into quarters
- 1 tbsp Olivado Avocado Oil & Basil
- 150 g FreshLife Californian Walnuts
- 3 tbsp liquid honey
- 100 g baby rocket leaves or spinach
- 2–4 tbsp BluesBros Blueberry Balsamic Drizzle
Instructions
- Preheat the oven to 180 °C. Line a baking tray with baking paper.
- Heat a frying pan to a medium–high heat. Drizzle oil into the pan, then add radishes. Toss every minute or so, cooking for 4–6 minutes until golden brown.
- Remove from the heat and set aside to cool slightly.
- Place walnuts on the prepared baking tray. Drizzle with the honey. Cook for 3–6 minutes until golden brown. Set aside to cool for 5 minutes.
- Toss radish, walnuts and salad greens in a serving bowl.
- Generously top with blueberry balsamic drizzle.
