Baked feta and tomato pasta
If you follow social media trends, you would have heard of baked feta and tomato pasta. Here's our take on this easy and delicious dish. We love the creamy feta with fresh basil and salty olives. Yum!
Ingredients
- 1 block feta cheese 200g
- 4 cups cherry tomatoes
- ¼ cup Olivado avocado oil and basil
- salt and pepper
- 2 tsp chilli flakes optional
- 250 g Diamond penne pasta
- 2 garlic cloves crushed
- 1 cup assorted pitted olives
- ⅓ cup Superb Herb basil leaves torn
Instructions
- Preheat the oven to 200°C.
- In a large oven proof dish add tomatoes. Place the feta block in the middle and drizzle with oil, then season with salt and pepper and chilli flakes (optional). Bake for 35 minutes.
- Meanwhile, cook penne pasta as per packet instructions. Drain and set aside.
- Once the tomato and feta are cooked, add garlic, olives and basil and stir well. Add cooked pasta, stir to cover and serve while hot. Yum!
