Cucumber and sour cream bites

These fun cucumber and sour cream bites are great served as appetisers or in your lunchbox.

  • Chop the dill.
  • Use a large salad bowl and add the sour cream, pine nuts, dill and garlic.
  • Season with salt and pepper and mix everything together.
  • Slice the cucumber through the middle and scoop the seeds out to make room for the filling.
  • Overfill the cucumber halves with sour cream mix and run a butter knife blade along the edges of the cucumber to spread it smoothly. Put the excess filling back in the bowl
  • Slice filled cucumber into 1 inch (2.5 cm) thick slices.
  • Serve cold!

Notes

Top them with little flags and you have yourself a fleet of cucumber boats. Perfect for a kids party.
