BBQ chicken, bacon and avo burgers
Chicken, bacon and avocado is the ultimate combo, and it tastes even more delicious in burger form. The taste of summer!
Ingredients
- 4 burger buns
- 4 Waitoa free range fresh chicken thighs
- Olivado Avocado oil for cooking
- 8 rashers streaky bacon
- ¼ cup store bought aioli
- 25 g feta
- ½ tsp wholegrain mustard
- 1 small avocado
- 2 tbsp chopped red onion
- Salad leaves
- Fresh lemon wedges to serve
Instructions
- Heat up the BBQ or a frying pan on a medium high heat. Place the chicken thighs on a plate, season and drizzle with oil. Cook for 4-5 minutes each side, or until the chicken is completely cooked through. Just before the chicken is cooked, place the bacon on the BBQ and cook until crispy.
- In a bowl, mash the avocado with a folk. Mix the aioli, feta and mustard. Stir well and season if desired, then set aside.
- Build the burgers. Split the buns in half. Spread the avocado mixture generously on the bottom half. Top with some red onion, salad leaves, a chicken thigh, two bacon rashers and more avocado mixture, then finish with the top half of the burger bun. Insert a cocktail stick to put together if liked. Serve with fresh lemon wedges.
