Apple & nut mince pies

Easy and tasty, these mini apple and nut mince pies are everything you want for Christmas. Warm, sweet and cosy.

Ingredients
 
 

  • 400 g apples peeled and chopped
  • 1.5 tbsp sugar
  • 1 lemon zested
  • 2 tbsp rum
  • 1 tsp mixed spice
  • 2 tbsp butter
  • 1 cinnamon stick
  • 25 g FreshLife Pecans
  • 25 g FreshLife Californian Walnut Pieces
  • 6 sheets store-bought sweet shortcrust pastry
  • 1 egg beaten
  • 1 tbsp icing sugar for garnish

Instructions
 

  • In a pot, place apple, hum, butter, sugar, lemon zest, mixed spice and cinnamon stick.
  • Cook at a medium to low heat for 10-15 minutes stirring often or until the apples are tender.
  • Remove from the heat & add in the chopped FreshLife pecans & walnut pieces. Set aside to cool.
  • Preheat oven to 180C.
  • Using a round cutter (use a glass if you don’t have a cookie cutter), cut out 16 bases and place into a pre-oiled cupcake tray. Divide the mixture between each of the pies. Brush the edges with a little beaten egg.
  • Using a round cutter slightly smaller than the base cut out 16 lids. Press the lids on top to seal.
  • If you have a star cut out shape, cut out 16 stars. Use egg wash to stick the stars on.
  • Cut two slits on the top of each pie.
  • Brush the tops of the pies with beaten egg.
  • Bake the mince pies for 20-25 minutes till golden brown. Remove from the oven & set aside to cool.
  • Dust with icing sugar before serving.
