Celery and Ozo Salad
A delicious and tasty orzo salad, ideal to take for a pot luck.
Serves: 4-6
Ingredients
2 stalks celery, finely diced
2 cups cooked orzo
½ cup green olives, chopped
1 orange, peeled and segmented
1 tsp orange zest
2 cloves garlic, crushed
¼ cup chopped parsley
¼ cup canola oil
1 Tbsp white vinegar
2 stalks celery, sliced
Method
- Place diced celery and orzo in a bowl. Add olives, orange, and orange zest.
- Mix the garlic, parsley, oil and vinegar together in a screw top jar. Shake to combine and pour over the salad
- Toss through celery slices.
- Cover and chill until ready to serve.
