Lemon Prawn Zinguine
Yes we mean zinguine, not linguine as this wonderful prawn dish is made with zucchini noodles instead of pasta - low carb, high vege goodness.
Ingredients
- 2 Zucchinis (courgettes) spiralized with thick noodle blade.
- 1 tsp salt
- 2 Tbsp butter
- 1 Tbsp Minced Garlic
- 250 g prawns
- ½ lemon juiced and the zest
- 2 Tbsp fresh parsley roughly chopped
- Salt and pepper
Instructions
- Spiralize your zucchinis and place in a colander, salting generously until your zoodles are coated. Set aside for 10 minutes which removes excess water.
- Place the zoodles in a teatowel or handee towel and squeeze out as much water as possible.
- In a large saucepan over a medium to high heat, melt the butter. Add the garlic and saute until fragrant, about 1-2 minutes.
- Add the zoodles and cook until tender crisp, about 4-5 minutes.
- Add in the prawns, the lemon juice and lemon zest and cook a further 2 minutes.
- Toss in the parsley, remaining lemon juice and season to taste.
- Stir together and serve hot.
