Satay Noodles Healthy Food Ideas
This Satay Noodles recipe is a fast, easy, family favourite. The recipe uses two-minute noodles and everything a kiwi kitchen has on hand at home: peanut butter, frozen veg and chicken. Experiment, add in whatever veges take your fancy.

Ingredients
 
 

  • Alfa One rice bran oil spray
  • 1 skinless chicken breast fillet cut into thin slices
  • 1 ½ cups water
  • ½ 500g packet frozen veggie mix
  • 75 g packet 2 minute noodles
  • ½ tsp contents of flavour sachet from noodles
  • 1 Tbsp crunchy peanut butter
  • 1 Tbsp mild sweet chilli sauce

Instructions
 

  • Spray a medium saucepan lightly with oil.
  • Heat pan, add chicken and cook until browned.
  • Add water and vegetables and bring to boil, cover and simmer for 5 minutes.
  • Break noodles into pieces and add to pan along with ½ teaspoon from flavour sachet.
  • Drain off most of liquid reserving approximately ½ cup.
  • Stir in peanut butter and chilli sauce and heat gently for 1-2 minutes.

Notes

Tip: Omit chicken and simply add more vegetables for a vegetarian option.
