Smoked salmon poke bowl
An easy-to-make yet impressive poke bowl recipe. Colourful, healthy, and light, but satisfying. The citrus soy dressing makes it perfect.
Ingredients
- 190 g Aoraki Cold Smoked Salmon Slices
- 1 â…“ cups mama san shelled edamame defrosted
- 1 â…“ cups mama san seaweed salad defrosted
- 1 cup baby spinach
- 2 cups red cabbage finely shredded
- 2 avocados sliced
- 2 spring onions finely sliced
- 1 red chilli finely sliced
- sesame seeds
- 4 portions cooked brown rice
Dressing
- ¼ cup lime juice
- 1 tbsp tamari
- 1 tbsp sesame oil
- 2 tsp honey
Instructions
- Combine the lime juice, tamari, sesame oil, and honey in a small jar.
- Place brown rice in individual bowls. Top with the baby spinach, shredded red cabbage, seaweed salad, and edamame beans. Arrange avocado slices and smoked salmon.
- Shake to mix the dressing well, then pour over each poke bowl.
- Garnish with spring onion, red chilli and sesame seeds to serve.
