Homemade tzatziki

Make Tzatziki from scratch. This freshly made Greek style dip is perfect as a condiment too.

Ingredients
 
 

  • 1 cucumber grated
  • 1 cup plain Greek yoghurt
  • 2 tbsp extra-virgin olive oil
  • 2 tbsp chopped fresh herbs mint, dill
  • 1 tbsp lemon juice
  • 1 clove garlic minced
  • sea salt

Instructions
 

  • Lay a piece of Handee paper towel on a dry clean surface. Grate cucumber on the paper towel. Place another towel over the graded cucumber and lightly squeeze to remove excess moisture. Transfer the squeezed cucumber to a bowl, repeat with the remaining cucumber for a few times.
  • Add yoghurt, olive oil, herbs, lemon juice, garlic, then season with salt. Mix well and leave for 5 minutes to allow the flavours to meld.
  • Serve tzatziki immediately or chill. It keeps well in the refrigerator for 3 days.
