Waitoa Roast Chicken with Rosemary Garlic Lemon
Need some inspiration for your roasted chicken? Look no further! Just try this sensationally tasty Waitoa free range zesty roasted chicken with rosemary, garlic and lemon.
Ingredients
- 1 whole Waitoa free range chicken
- 2 cloves garlic finely chopped
- Small bunch of rosemary & parsley finely chopped
- 1 Lemon zest and juice
- ¼ cup Olivado olive oil
- 1 tsp flaky sea salt
- 1 tsp smoked paprika or piripiri seasoning
Instructions
- Preheat oven to 190°C and line a large roasting pan with baking paper
- In a small bowl combine chopped garlic, chopped herbs, lemon zest and juice, olive oil and seasoning.
- Brush marinade all over chicken, place it on a prepared tray, and surround with a few of your favourite vegetables (baby potatoes, red onion wedges, etc)
- Roast for 50 - 60 minutes until golden and juices run clear.
Notes
(omit the oil and lemon juice if you want more of a rub but it won’t be quite as golden when cooked up due to the lack of oil.)
