Summer Pasta Salad
Colourful and flavourful pasta salad for summer entertainment. Pick and choose your ingredients or keep them all, the choice is yours!
Ingredients
For the salad
- 250 g Diamond Spiral Pasta cooked al dente
- ½ cup cherry tomatoes whole, halved or quartered
- ½ cup black olives
- ½ cup cucumber diced
- ¼ cup feta cheese cubed
- ¼ cup red onion sliced thinly
- a handful fresh basil leaves
For the dressing
- ¼ cup Tatua sour cream
- 2 tbsp DYC white wine vinegar
- 2 tbsp extra virgin olive oil plus extra for the pasta
- 2 tsp Dijon mustard
- 1 clove garlic crushed
- ½ tsp salt
- ¼ tsp pepper
Instructions
- Cook the pasta according to the packet instructions. When cooked, sprinkle the extra olive oil and set aside to cool.
- While the pasta is cooking, prepare other salad ingredients.
To make the dressing
- Place the sour cream in a small bowl and whisk to remove any lumps. Add the remainder of the dressing ingredients and stir to combine. Taste and adjust the seasoning.
- Combine all the salad ingredients in a bowl & toss together. Dress and serve.
