Lemon & cheese angel hair pasta
The combination of Parmesan cheese and lemon matches very well with the angel hair pasta. Thin pasta cooks in only 4 minutes and almost no cooking required to make the delicately scented sauce. A must to try.
Ingredients
- 250 g Diamond angel hair pasta
- ¼ cup FreshLife pine nuts
- 1 tbsp butter
- ½ tbsp black pepper
- 100 g parmesan finely grated
- 1 tbsp lemon zest
- ½ cup mascarpone
- 1 tsp lemon juice or more to taste
- Superb Herb basil leaves to serve
Instructions
- Cook pasta as per packet instructions.
- Meanwhile, toast your pine nuts and set aside.
- In a large pan, pour a cup of pasta cooking water and pepper. Add butter and stir until the butter is melted and bubbling.
- In a separate bowl, mix the parmesan and lemon zest with a little pasta water. Stir until you get a smooth paste.
- Add the cooked pasta to the pan, stir in the cheese mixture and mascarpone.
- To serve, add a fresh squeeze of lemon over the pasta and top with pine nuts. Top with fresh basil.
