PeaNOT butter muesli bars

Two rows of peaNOT butter based muesli bars, nut-free and delicious, set on baking paper with a jar of chocolate sauce.
Muesli bars are the easiest lunchbox and afternoon snack. We make ours with delicious PeaNOT butter. Get the kids to help make these for some kitchen fun. Try adding in your favourite dried fruits, seeds or even chocolate chips.

Ingredients
 
 

Chocolate drizzle

  • 150 g chocolate melted

Instructions
 

  • Add PeaNOT butter, coconut oil and maple syrup to a saucepan and warm over medium heat. Stir continuously until well combined. (Alternatively use a microwave proof bowl and microwave in 20 second intervals, stirring each time, until smooth.)
  • Add all dry ingredients to a large bowl and toss to combine. Pour over wet ingredients and stir to combine. Add extra maple syrup to your preferred sweetness. If the mixture is too wet then add extra oats.
  • Line a baking tin with baking paper. Spoon the muesli bar mixture in and press down with wet hands or a wooden spoon to flatten the bars.
  • Pop in the fridge to harden for two hours, or overnight.
  • Slice bars into squares or rectangles and store in an airtight container in the fridge.
  • If you want the chocolate drizzle then attractively drizzle chocolate over muesli bars.
