Bacon Potato Hash
This Bite NZ inspired recipe is a weekend brunch favourite, or an easy whip together dinner. Everyone will love this comforting hash!
Ingredients
- Olivado Extra Virgin Avocado Oil
- ½ Onion finely chopped
- 200 g Heller's cooked bacon strips diced
- 2 cups Wilcox Vivaldi Gold cooked potatoes cubed
- 1 tbsp Worcestershire sauce
- 2 tbsp Superb Herb fresh parsley chopped
To serve
- Fried egg
- NZ avocado
Instructions
- Bring a heavy based pan to a medium heat with a generous drizzle of avocado oil. Once hot, sauté the onion until it comes translucent. Set aside in a bowl.
- Add some more oil to the pan, and fry the ham and potato until crispy and golden. Return the onions to the pan, and stir through with the Worcestershire sauce.
- Sprinkle with parsley before serving, and top with a fried egg and avocado.
